Plant-based dairy alternatives: getting past the chalk and the split

Plant milks fail on three sensory faults and one stability fault. All four are formulation problems with known solutions.

Plant-based dairy has moved from novelty to a permanent category, and the technical gap between a good product and a poor one is now obvious to consumers. Four problems account for most of that gap.

Fault one: chalkiness

Particle size. Plant protein and fibre particles above roughly 20 microns are perceived as gritty or chalky on the palate. Wet milling, colloid milling and high-pressure homogenisation at adequate pressure address it. This is an equipment issue as much as a formulation one, and it is the first thing to check.

Lipoxygenase activity in soy and pea generates the off-notes consumers describe as beany. Thermal inactivation of the enzyme early in the process, careful ingredient selection and deodorised protein grades all help. Masking alone rarely gets you there.

Fault three: thin mouthfeel

Dairy milk gets body from fat globules and casein micelles. Plant systems need it constructed - a combination of oil, hydrocolloid and protein content. Gellan and low levels of gum blends are common, and the target is body without sliminess, which is a narrow window.

Fault four: separation and sedimentation

Suspension stability over shelf life is the most frequent commercial failure. It depends on protein solubility at the product pH, particle size distribution, viscosity and homogenisation pressure. Products that look fine at week one and separate at week eight almost always have a particle size or a pH-solubility problem.

Barista formats are a different product

A plant milk that behaves in coffee needs specific protein levels and buffering salts to resist the acid and heat of espresso, and enough protein and fat to foam. Attempting to sell one SKU into both retail and cafe channels usually disappoints both.

Fortify honestly

Calcium, vitamin D and B12 are the nutritional gaps versus dairy. Fortifying is straightforward; keeping calcium in suspension without sedimentation is not. Choose the calcium salt for suspension behaviour as much as for bioavailability, and validate over the full shelf life.
